Coconut fried rice: Ingredients: a.)Cooked rice-1 bowl b.)Onion-2 in no Chopped c.)Tomato-2 in no Chopped d.)Capsicum- half Chopped e.)Carrot- Half finely chopped f.)1/4 bowl freshly chopped coconut g.)Peanuts- 1/4 cup h.)Green chili-1/2 finally chopped i.)Fresh chopped Coriander Spices:(Quantity of all spices should be according to taste) a.)Salt b.)Red Chili c.)Pinch of Garam Masala d.)Pinch of Black pepper Recepie: Take a pan. Put 1-1/2 tablespoon oil in it. Open the gas and let the oil heat. Now first put onion in the pan.Fry it util it turns little brown. Next mix the tomato.Fry it till a minute with onion. Now put the remaining vegetables in pan(Capsicum, Carrot, Green chili).Leave it till a minute or two. Keep vegetables a little raw , it gives a good taste. Now mix the spices except gram Masala which should be added at the end.Now add rice and both coconut. Let it fry for some time(3-4 minutes). Now add garam masla from top and at last add freshly chopped coriander. Now enjoy the rice with smile.
